
Spinach, potato and chickpea bites
Ingredients:
250g potatoes
1 large onion
4 cloves garlic
150g spinach or chard
1 lime
2tbsp flour
2 eggs
2tsp cumin seeds
2tsp coriander
1 can chickpeas
Method:
- Lightly steam the spinach for a couple of minutes, squeeze out any excess water and chop
- Grate the onion and potato together and let it sit for 15 mins – squeeze out excess water
- Roughly chop the chickpeas
- Crush the cumin and coriander seeds
- Put all the ingredients in a mixing bowl together and stir around so the vegetables are covered in flour and egg. Season well and stir again
- Heat some oil in a pan and when hot spoon the mixture onto the frying pan
- Cook for 2-3 minutes on each side
