
Kale with cannellini beans
Ingredients:
1 onion
4 garlic cloves
½ chilli
1 can cannellini beans
1-2tbsp capers
6 artichokes (from a jar)
8 fresh tomatoes
8 sundried tomatoes
Method:
- Finely chop the onion, garlic and chilli
- Finely shred the kale
- Drain the artichokes and cannellini beans
- Chop the tomatoes
- Heat about 3tbsp of olive oil and add the onions, chilli and garlic with the kale
- Sauté for a few minutes before adding the tomatoes.
- Cook until the kale is tender then add the cannellini beans, capers and artichokes
- Stir round for a few minutes and season well
