Kale with cannellini beans

1 onion
4 garlic cloves
½ chilli
1 can cannellini beans
1-2tbsp capers
6 artichokes (from a jar)
8 fresh tomatoes
8 sundried tomatoes
  • Finely chop the onion, garlic and chilli
  • Finely shred the kale
  • Drain the artichokes and cannellini beans
  • Chop the tomatoes
  • Heat about 3tbsp of olive oil and add the onions, chilli and garlic with the kale
  • Sauté for a few minutes before adding the tomatoes.
  • Cook until the kale is tender then add the cannellini beans, capers and artichokes
  • Stir round for a few minutes and season well
