Carrot and hazelnut salad

Handful of carrots
Handful of spring onions
100g hazelnuts
1 orange
tbsp olive oil
1small bunch of chopped coriander or mint
  • Toast the hazelnuts and finely chop
  • Finely slice the carrots and onions
  • Squeeze the orange
  • Add all the ingredients to a bowl, stir together and season well
