
Carrot and hazelnut salad
Ingredients:
Handful of carrots
Handful of spring onions
100g hazelnuts
1 orange
tbsp olive oil
1small bunch of chopped coriander or mint
Method:
- Toast the hazelnuts and finely chop
- Finely slice the carrots and onions
- Squeeze the orange
- Add all the ingredients to a bowl, stir together and season well
