
Broad bean pate
Ingredients:
450g shelled broad beans
150ml olive oil
2 cloves garlic
The juice of 1 small lemon
1tsp chopped fresh thyme
Salt and pepper
Method:
- Steam the broad beans for a few minutes, then place them in a blender with the garlic, olive oil, 1/2 the lemon juice and thyme
- Blitz until you have a smooth mixture, then season. Add more lemon juice, to taste
