
Beetroot, coconut and lime soup
Ingredients:
25g butter
2 small onions
750g baby beetroot
300ml vegetable stock
1 can coconut milk
1-2 limes
6tbsp plain yoghurt
Method:
- Wash and trim the beetroot and finely chop
- Slice the onion
- Melt the butter in a pan and add the onion
- Saute for a few minutes before adding the beetroot. Stir round for a couple of minutes before adding the stock
- Simmer for 15 minutes. Blend then add the coconut milk and lime juice to taste
- Serve with a large tbsp of yoghurt and grated lime zest
