
Spicy mushroom and chickpea burgers
Ingredients:
1 onion
2 cloves garlic
1/2 chilli
1 tsp ground cumin
1 tsp ground coriander
½ tsp turmeric
200g mushrooms, finely chopped
Juice of 1 lime
2tsp soy sauce
1 can of chickpeas
1-2tbsp chopped fresh coriander
75g fresh breadcrumbs
Flour for coating and oil for frying
Method:
- Finely chop the onion, chilli and garlic
- Put a dash of oil olive oil into a large pan, heat gently, then add the onion, chilli and garlic and cook, while stirring, for 5 minutes until softened but not coloured. Add the spices and cook for a further 3 minutes
- Finely chop the mushrooms, then add to the pan, along with the lime, and cook for 5 minutes to soften
- Put into a large bowl to cool for a while
- Semi blitz the chickpeas in a processor or crush with a fork until broken but not pasted, then add to the bowl with breadcrumbs, soy sauce, fresh coriander, salt and pepper. Mix well with a fork
- Sprinkle a plate with flour, then take handfuls of the mix and shape into six burgers. Roll them in the flour
- Chill the burgers on a plate in the fridge for a few minutes or until needed, then fry for 3 to 5 minutes on each side in a little olive oil before serving
