
Courgette and feta bake
Ingredients:
2 courgettes
1 red onion
A handful of chopped herbs (coriander, parley, mint etc)
75g strong Swiss cheese
75g feta
3 eggs
100g polenta
1tbsp olive oil
Handful black olives
Method:
- Put the oven on at 180C
- Oil a 23cm baking dish
- Grate the courgettes
- Finely chop the red onions
- Grate the Swiss cheese and cube the feta
- Whisk the eggs in a bowl and add the Swiss cheese, courgettes, herbs, polenta and onions. Season well.
- Pour the mixture into the prepared dish and scatter with the cubed feta and black olives.
- Drizzle over the olive oil and bake in the oven for 30 minutes
