Courgette and feta bake

2 courgettes
1 red onion
A handful of chopped herbs (coriander, parley, mint etc)
75g strong Swiss cheese
75g feta
3 eggs
100g polenta
1tbsp olive oil
Handful black olives
  • Put the oven on at 180C
  • Oil a 23cm baking dish
  • Grate the courgettes
  • Finely chop the red onions
  • Grate the Swiss cheese and cube the feta
  • Whisk the eggs in a bowl and add the Swiss cheese, courgettes, herbs, polenta and onions. Season well.
  • Pour the mixture into the prepared dish and scatter with the cubed feta and black olives.
  • Drizzle over the olive oil and bake in the oven for 30 minutes
