
Carrot and courgette salad with maple and lime
Ingredients:
100g cooked quinoa
1 courgette
3-4 baby carrots
4 spring onions
3tbsp cashew nuts
1tbsp maple syrup
1tbsp lime juice
3tbsp olive oil
Salt and pepper
Method:
- Make the dressing by shaking the olive oil, lime juice and maple syrup together in a jam jar with salt and pepper
- Use a mandolin / spiralizer to finely slice the courgette and carrots
- Finely chop the spring onions
- Mix the quinoa and vegetables together with the dressing
- Lightly roast the cashew nuts before sprinkling over the top and serving
