Stuffed greens with a tahini dressing

8-10 green leaves
1 onion
2 cloves garlic
225g mushrooms
8 cherry tomatoes
1tsp mixed spice
1tsp cumin
150ml vegetable stock
150g cooked brown basmati
Tahini dressing:
3tbsp tahini
3tbsp olive oil
1tbsp soy sauce
1tbsp lemon juice
  • Steam the greens for 5-7 minutes until tender
  • Finely chop the onion and garlic and sauté for 4-5 minutes
  • Add the spices and stir on the heat for a minute
  • Chop the mushrooms and tomatoes and add to the pan
  • Cook together for a couple of minutes
  • Add the rice and season well with salt and pepper
  • Put the oven on gas mark 5/190C
  • Put a sausage of rice stuffing on each green leaf and roll
  • Place in a casserole dish and put any access stuffing around the rolls
  • Pour over the vegetable stock and cook in the oven for 25 minutes
  • Make the dressing by putting the tahini in a jug and slowly whisking in the olive oil
  • Add the lemon juice and soy
  • Serve with the dressing poured over the rolls
