Roast cauliflower and hazelnut salad

1 bag mixed salad leaves
1 large or 2 small cauliflower
50g chopped roast hazelnuts
3tbsp olive oil
1tbsp sherry vinegar
1tbsp honey
1tsp mixed spice
  • Pre-heat the oven to 200C
  • Break the cauliflower into florets
  • Put them in a roasting tin with 1tbsp of olive oil, and roast for 15 minutes
  • Mix the dressing ingredients together in a jar and season well
  • Roughly tear the salad leaves and mix together with the roast cauliflower and dressing
  • Sprinkle with the roast hazelnuts
