Caraway and maple roasted root veg

1 onion
1 swede
1 parsnip
1 large carrot
5 garlic cloves
1tbsp caraway seeds
2tbsp cider vinegar
100ml cider
2tbsp maple syrup
125g pecan nuts
  • Heat the oven to 200C
  • Prepare the root vegetables by roughly chopping them and steaming them for 5 minutes
  • Chop the onion and garlic and mix with the root vegetables in a bowl
  • Toss the vegetables in the olive oil, caraway seeds and season well
  • Roast in the oven for 20 minutes then add the cider and cider vinegar
  • Roast for another 8-10 minutes before drizzling with maple syrup, adding knobs of butter and sprinkling with pecans
  • Roast for another 7-8 minutes before serving
