Caramelized onion, broccoli and feta tart

For the pastry:
125g plain flour, plus extra for rolling
125g wholemeal flour
150g butter
I egg, beaten
For the filling:
2 onions
1tbsp brown sugar
1tbsp balsamic vinegar
3 eggs
400g broccoli
150ml Greek yoghurt
200g feta
  • Pre-heat the oven to 180C
  • Rub the butter into the flour until the mixture resembles fine breadcrumbs
  • Add the egg and stir with a knife until the mixture just comes together as a dough. Bring the dough together and flatten into a round
  • Put the pastry in the centre of a 20cm/8in spring base tart tin and carefully ease it over the base and up the sides of the tin
  • Chill the pastry for 2 hours before baking it for 15 minutes until golden
  • Meanwhile, prepare the filling by slicing the onions in half and putting in a pan with a spoon of olive oil
  • Cook for 5 minutes, then add the vinegar and sugar and turn the heat down
  • Simmer for 20 minutes
  • Break the broccoli into florets and steam for a couple of minutes
  • Crack the eggs into a jug and whisk with the yoghurt. Season well
  • Cover the base of the tart with the caramelized onion and then the broccoli
  • Pour over the egg mixture. Crumble the feta over the top
  • Bake for 20-25 minutes, and serve
