Spiced celeriac soup

Half a celeriac
1 carrot
1 leek
1 potato
2 cloves garlic
1 thumb sized piece of turmeric, or 1/2 tsp dried turmeric
1 tsp vegetable bouillon
  • Finely slice and saute the leek.
  • Dice and crush the carrot, potato, celeriac and garlic and add to the pan after a few minutes
  • Add the turmeric - finely grated if using fresh
  • Cook, whilst stirring for a few minutes
  • Add about a pint of vegetable bouillon
  • Cook for around 20 minutes, season and half blend before serving
