Parsnip and walnut fritters

For the batter:
100g flour
1 egg
25g melted butter
65ml milk
1tbsp oil
For the filling:
1kg parsnips
100g chopped walnuts
100g cooked wild / basmati rice
2tbp chopped parsley
  •  Make up the batter by putting the flour in a jug and breaking in the egg
  • Combine the liquid ingredients and slowly beat into the flour and egg
  • Put the batter aside for approximately 30 minutes.
  • Scrub the parsnips clean and dice into 1cm pieces. Steam for about 8 mins
  • Add all the ingredients to the batter and combine well
  • Heat a frying pan and paint with nut oil
  • Drop 1tbsp dollops onto the pan and cook for 3-4 mins on each side
