Kale with lentils

75g puy or dark speckled lentils
½ bag kale
1 onion
1tsp vegetable stock
2tbsp olive oil
4 cloves garlic
10 tomatoes
1tsp thyme

  • Simmer the lentils in 250ml water for 15 minutes until soft
  • Finely chop the onion and garlic
  • Roughly chop the kale
  • Heat the olive oil in a wide flat pan and add the onion and garlic
  • Stir in the pan for a couple of minutes before adding the kale
  • Stir for another couple of minutes
  • Add the lentils, thyme and tomatoes
  • Stir and cook until the kale is tender
  • Season with salt and feshly ground black pepper
