
Kale with lentils
Ingredients:
75g puy or dark speckled lentils
½ bag kale
1 onion
1tsp vegetable stock
2tbsp olive oil
4 cloves garlic
10 tomatoes
1tsp thyme
Method:
- Simmer the lentils in 250ml water for 15 minutes until soft
- Finely chop the onion and garlic
- Roughly chop the kale
- Heat the olive oil in a wide flat pan and add the onion and garlic
- Stir in the pan for a couple of minutes before adding the kale
- Stir for another couple of minutes
- Add the lentils, thyme and tomatoes
- Stir and cook until the kale is tender
- Season with salt and feshly ground black pepper
