
Spiced brussel sprouts with tomato
Ingredients:
400g brussel sprouts
4 tomatoes
1 onion
2cm ginger
2 cloves of garlic
1 tbs coriander seeds
1 tbs soy sauce
Method:
- Peel the outer layers from the sprouts and chop the larger ones in half
- Bring a steamer to the boil and steam the sprouts for 5 minutes
- Chop the tomatoes in half and then into chunky slices
- Thinly slice the onion
- Heat 1tbsp of olive oil and sauté the onion for 2 minutes
- Meanwhile crush the coriander seeds, thinly slice the garlic and grate the ginger
- Add the coriander, garlic and ginger to the onion
- After a couple of minutes add the tomatoes, sprouts and soy sauce
- Cook for a further 5 minutes and serve
