Spiced brussel sprouts with tomato

400g brussel sprouts
4 tomatoes
1 onion
2cm ginger
2 cloves of garlic
1 tbs coriander seeds
1 tbs soy sauce
  • Peel the outer layers from the sprouts and chop the larger ones in half
  • Bring a steamer to the boil and steam the sprouts for 5 minutes
  • Chop the tomatoes in half and then into chunky slices
  • Thinly slice the onion
  • Heat 1tbsp of olive oil and sauté the onion for 2 minutes
  • Meanwhile crush the coriander seeds, thinly slice the garlic and grate the ginger
  • Add the coriander, garlic and ginger to the onion
  • After a couple of minutes add the tomatoes, sprouts and soy sauce
  • Cook for a further 5 minutes and serve
