Sweetcorn fritters

Kernels from 2 heads of sweetcorn
100g self raising flour (50:50 white:wholewheat)
2 eggs
150ml milk
50g chopped almonds / walnuts OR cheese
Salt and pepper
Oil or butter for frying
  • Put the flours and salt and pepper in a bowl
  • Make a well in the centre and break in the eggs
  • Start to beat in the eggs and add the milk to make a thick creamy consistency
  • Add the sweetcorn and nuts (or cheese)
  • Heat a frying pan or griddle and add the oil
  • Drop several spoonfuls of batter into the hot pan
  • When they start to bubble on the side facing up, turn them
  • Delicious served with a tomato salsa
