
Sweetcorn fritters
Ingredients:
Kernels from 2 heads of sweetcorn
100g self raising flour (50:50 white:wholewheat)
2 eggs
150ml milk
50g chopped almonds / walnuts OR cheese
Salt and pepper
Oil or butter for frying
Method:
- Put the flours and salt and pepper in a bowl
- Make a well in the centre and break in the eggs
- Start to beat in the eggs and add the milk to make a thick creamy consistency
- Add the sweetcorn and nuts (or cheese)
- Heat a frying pan or griddle and add the oil
- Drop several spoonfuls of batter into the hot pan
- When they start to bubble on the side facing up, turn them
- Delicious served with a tomato salsa
