Simple seeded salad

A handful of baby spinach
Half a lettuce
1 bag of cherry tomatoes
1 bunch of spring onions
A sprinkle of pumpkin seeds
1 tbsp olive oil
½ tbsp cider vinegar
1 clove of garlic (crushed)
1 tsp dijon mustard
1 tsp soy sauce
1 tsp honey
  • Tear the leaves into small pieces
  • Half the tomatoes and chop the spring onions
  • Toast the pumpkin seeds in a dry frying pan
  • Place all the other ingredients into a jam jar and shake
  • Put all ingredients together in a bowl and gently mix
