Colourful Cauliflower Cheese

1 purple cauli
1 romanesco cauli
1 sweet pepper
1 onion
2 cloves garlic
50g butter
50g plain white flour
500ml milk
1tsp wholegrain mustard
100g grated cheddar cheese
Handful of bread crumbs
Cracked black pepper
  • Break the cauliflowers into florets and steam until al dente
  • Slice the onion, pepper and garlic and gently fry
  • Mix together in a dish
  • Make a cheese sauce by melting the butter in a pan, adding the flour and stirring for a minute or two
  • Remove from the heat and slowly add half the milk, stirring continuously
  • Put the sauce back on the heat and slowly add the remaining milk. Stir in the mustard and allow the sauce to thicken for a few minutes, whilst stirring. Add a generous pinch of cracked black pepper
  • Add most of the cheese
  • Pour the sauce over the vegetables
  • Sprinkle the breadcrumbs and remaining cheese over the top and bake in the oven at 180 degrees for around 45 minutes
