Beetroot Blinis

100g buckwheat flour
1 tsp baking powder
Pinch salt
1 eggs
300ml milk (dairy/soya etc)
1 tbsp olive oil
2 beetroot
  • Make the batter by putting the flour, baking powder and salt into a mixing bowl
  • Add the egg and whisk in the milk a little at a time
  • Whisk into smooth batter
  • Leave to rest for about an hour
  • Grate the beetroot and stir into the batter with the olive oil
  • Season with salt and pepper
  • Lightly oil (with sunflower oil) a heavy frying pan and heat 
  • Put three bare tbsp of the batter on the pan
  • Cook for about two minutes then turn over
  • Repeat until all the batter is used up
