Summer salad of fennel and orange

1 bulb fennel
1 orange
Olive oil
Cracked black pepper
  • Remove the tough stalks and base of the fennel, and put the feathery fronds to one side
  • Thinly slice the fennel and put in a bowl
  • Segment the oranges and mix in with the fennel
  • Drizzle with olive oil and season with plenty of freshly cracked black pepper
  • Chop up the reserved fronds and sprinkle on top
