Mexican Street Salad
Ingredients:
1/2 red cabbage
1/2 white cabbage
8-10 carrots
1 small bunch of radishes
1/2 bunch coriander
2 large jalapeño chillis (or other fresh chillis)
1 red onion
1 tsp caster sugar
2-3 limes
5tbsp olive oil

Method:
- Finely chop the cabbage, grate the carrots and slice the radishes and onions
- Finely chop the coriander and chilli
- Squeeze the limes
- Mix together the olive oil, lime and caster sugar
- Put the cabbage into a large bowl with the radishes, carrots, onion and most of the coriander
- Mix together really well, adding almost all the chopped chilli
- Add the olive oil and lime juice and a good pinch of salt, then toss together
- Sprinkle the remaining chilli and corriander on top
