Mexican Street Salad

1/2 red cabbage
1/2 white cabbage
8-10 carrots
1 small bunch of radishes
1/2 bunch coriander
2 large jalapeño chillis (or other fresh chillis)
1 red onion
1 tsp caster sugar
2-3 limes
5tbsp olive oil
  • Finely chop the cabbage, grate the carrots and slice the radishes and onions
  • Finely chop the coriander and chilli
  • Squeeze the limes
  • Mix together the olive oil, lime and caster sugar
  • Put the cabbage into a large bowl with the radishes, carrots, onion and most of the coriander
  • Mix together really well, adding almost all the chopped chilli
  • Add the olive oil and lime juice and a good pinch of salt, then toss together
  • Sprinkle the remaining chilli and corriander on top
