Beetroot tzatsiki

Ingredients: 
3 medium cooked beetroot
1 wet garlic bulb
300ml Greek yoghurt
2tsp cumin seeds
2tbs olive oil
1tbs red wine vinegar
Method: 
  • Chop the beetroot then puree using a blender
  • Crush the cumin seeds
  • Finely chop the garlic and mix with the yoghurt
  • Stir the beetroot puree into the yoghurt
  • Stir in the ground cumin, olive oil and vinegar
