Zesty carrot and courgettes

2 courgettes
4 carrots
25g butter
1 lemon
2tbs sesame seeds
  • Trim the courgettes and carrots
  • Toast the sesame seeds until golden
  • Use a mandolin or grater to finely slice the vegetables
  • Steam the vegetables for 4-5 minutes
  • Meanwhile melt the butter and grate the lemon zest into it
  • Add ½ the juice of the lemon, salt, and plenty of freshly ground black pepper
  • Add the steamed vegetables and stir round
  • Serve immediately with the sesame seeds sprinkled on top
