Easy Carrot Cake

150g / 6oz carrots
2 eggs
100g / 4oz molasses sugar
5tbsp sunflower oil
100g / 4oz wholemeal self-raising flour
1 tsp ground cinnamon
1/2 tsp ground nutmeg
50g / 2oz desiccated coconut
50g / 2oz raisins

Pre-heat the oven to gas mark 5 / 190C / 375F

Grease and line the base of a 18cm / 7" square cake tin

Finely grate the carrots

Whisk the eggs and sugar together until creamy

Whisk in the oil slowly

Add the remaining ingredients and mix together to combine evenly

Spoon the mixture into the prepared tin

Level the surface and bake in the preheated oven for 20-25 minutes until firm to the touch and golden brown
