Broad Bean Frittata

225g shelled broad beans
2 cloves crushed garlic
5 eggs
75g grated parmesan
1tbs pesto
olive oil
  • Steam the broad beans for 5 minutes or until tender
  • Beat the eggs in a bowl and season with salt and freshly ground pepper
  • Grate the cheese
  • Heat the olive oil in a 17.5cm frying pan
  • Cook the garlic for minute then add the broad beans and stir round
  • Pour in the egg and stir
  • Cook over a medium heat until the frittata is set underneath and round the edges
  • Sprinkle on the cheese and swirl the pesto around in the liquid egg
  • Cook over a low heat until the egg is set
  • Put the grill on medium and put the frying pan under to brown off the frittata for 2-3 minutes
  • Serve hot or cold
