Beetroot and chocolate cake

1 large beetroot, cooked and roughly chopped
200g plain flour
50g cocoa powder
1 tsp baking powder
250g caster sugar
3 eggs
2 tsp vanilla extract
200ml olive or sunflower oil
100g dark chocolate
  • Pre-heat oven to 190C/ gas 5
  • Put beetroot in a food processor, blitz, then add a pinch of salt and the rest of the ingredients, except the oil and chocolate.
  • When completely mixed, add the oil in a steady stream.
  • Break the chocolate into small chunks and stir into the mix.
  • Tip into a lined 900g loaf tin and cook for 1 hour
