Spring greens with chilli, ginger and coriander seeds

1 bag of spring cabbage
1 chilli
1 leek
2cm piece ginger
Dash soya sauce
2tsp coriander seeds
  • Crush the coriander seeds
  • Peel and grate the ginger
  • Finely slice the chilli
  • Finely slice the leek and shred the cabbage
  • Heat 1/2tbsp of olive oil in a wok and add the chilli, cabbage and leek
  • Cook over a medium heat for a couple of minutes
  • Add the coriander and ginger and fry for another couple of minutes, stirring all the time
  • Finally add the soya sauce and cook for a further minute
