Green thoran

Ingredients: 
1 onion
1 clove garlic
2 tbsp sunflower oil / rape seed oil / ghee
1/2 tsp turmeric
½ cinnamon stick or 1 tsp cinnamon
1 tsp curry powder
12oz/300gms shredded cabbage/spring greens
1 can coconut milk
Method: 
  • Shred the cabbage
  • Slice the onion and chop the garlic
  • Fry the onion in 1tbp of olive oil for about 7 minutes
  • Add the turmeric, curry powder and cinnamon and stir for a few minutes until fragrant
  • Add the cabbage and coconut milk
  • Stir well then cover and leave to gently cook for 10 minutes until the cabbage is tender
  • Season well
