Fresh carrot and lentil soup with coconut and lime

1 tbsp olive oil/rape seed oil
2 onions
2 tbsp mild curry paste
1 stick of celery
18oz/500 grams carrots
6oz/175 red lentils
2oz/50 gms pearl barley
3 pints/1.8 litres veg stock
14floz/400 ml can of coconut milk
2 tbsp lime juice
3 tbsp fresh coriande
  • Finely chop the onion,carrot and celery
  • Heat the oil and add the vegetables to the pan
  • Soften in the pan, while stirring, for 5 minutes
  • Add lentils and pearl barley and stir before adding the stock
  • Now add the curry paste
  • Bring to the boil and simmer for 30 minutes
  • Blend half the soup until smooth
  • Mix with unblended soup
  • Chop the coriander
  • Add the coconut milk, lime juice and coriander
