Corn pancakes with roasted pepper, courgettes and goats cheese

Ingredients: 
3oz/75 grams plain flour
3oz/75 grams fine cornmeal
¼ tsp salt
¼ tsp paprika
2 eggs
300 mls milk
2 peppers
2 courgettes
2 onions
3 cloves of garlic
6oz/300grams crumbly goats cheese or feta
4oz/200gms breadcrumbs
Method: 
  • Sift the flour and cornmeal and season with salt and pepper
  • Crack the eggs into a well in the centre of the flour/cornmeal
  • Add a little milk until you get a smooth consistency
  • Leave the batter to rest for an hour
  • Meanwhile, slice the onions, peppers, courgettes and garlic, toss in olive oil and season with salt and black pepper
  • Place in the oven for 20 minutes at 190 degrees. Then put the roast vegetables in a bowl to cool
  • When cool, add the rest of the ingredients
  • Fry individual pancakes and fill with the vegetable mix
