Sweet potato rösti

2 sweet potatoes
2 eggs
2 tbsp plain flour
Handful of parsley
Olive oil
Salt and pepper
  • Peel and grate the potato and leave in a colander
  • Finely chop the fresh parsley
  • Place the grated potato, free-range eggs, salt and freshly ground black pepper, flour and fresh parsley into a bowl and mix together
  • Heat the oil in a non-stick frying pan
  • Fill the pan with the potato mixture and flatten the top
  • Cook the rösti mix for four minutes and turn over. Cook for another four minutes or until golden-brown on both sides and cooked through
  • Remove the rösti from the pan and drain on kitchen paper
