Stir fried sprouting broccoli, carrots and almonds

2 onions
2 carrots
1lb/200gms purple sprouting broccoli
4oz/100gms almonds
100gms/4oz black beans/black eyed beans/kidney beans
4 cloves garlic
1/2tsp chilli powder
1tbsp grated ginger
200ml hot water
100ml rice vinegar/white wine vinegar
25ml sherry/sake
25ml soya sauce
2tsp brown sugar
  • Put half the beans in a jug or food processor with the ground chilli
  • Chop the garlic and grate the ginger and add to the jug
  • Whizz or pulse together
  • Add the rest of the beans, soya sauce, wine vinegar, sherry, water and sugar
  • Leave to soak for a couple of hours
  • Toast the almonds and slice
  • Thinly slice the onion
  • Slice the carrots and roughly chop the broccoli
  • Heat a wok to a high temperature and add the vegetables
  • Cook over a high heat for five minutes
  • Add the sauce bit by bit and cook at a high heat for a couple of minutes to cook off some of the liquid
  • Add the almonds just before serving
