Homity Pie

Ingredients: 
230g wholemeal flour
2 tsp baking powder
3tbsp warm water
100g butter
350g potatoes
450g onions
25g butter
15g chopped parsley
100g strong cheddar
2 cloves garlic
1 tbs milk
Method: 
  • Place the flour and baking powder in a bowl
  • Rub in the butter until the mixture resembles fine breadcrumbs
  • Add sufficient warm water to make a soft but manageable dough
  • Roll out and cover a quiche/flan or pie dish of approx 8-10 inches
  • Put the dish into the fridge now to rest while you make the filling
  • Put the oven on at 220/425/gas mark 7
  • Chop the potatoes and steam until tender
  • Chop the onions and sauté in about 3tbsp of olive oil until tender
  • Combine the potatoes and onions
  • Add the parsley, butter, half the cheese, garlic and milk
  • Put the  filling into  the pastry case and sprinkle with the remaining cheese
  • Bake in the oven for 25-30 minutes
