Homity Pie
Ingredients:
230g wholemeal flour
2 tsp baking powder
3tbsp warm water
100g butter
350g potatoes
450g onions
25g butter
15g chopped parsley
100g strong cheddar
2 cloves garlic
1 tbs milk
Method:
- Place the flour and baking powder in a bowl
- Rub in the butter until the mixture resembles fine breadcrumbs
- Add sufficient warm water to make a soft but manageable dough
- Roll out and cover a quiche/flan or pie dish of approx 8-10 inches
- Put the dish into the fridge now to rest while you make the filling
- Put the oven on at 220/425/gas mark 7
- Chop the potatoes and steam until tender
- Chop the onions and sauté in about 3tbsp of olive oil until tender
- Combine the potatoes and onions
- Add the parsley, butter, half the cheese, garlic and milk
- Put the filling into the pastry case and sprinkle with the remaining cheese
- Bake in the oven for 25-30 minutes
