Swede and pearl barley risotto

Ingredients: 
swede
pearl barley
onion
celery
carrot
garlic
vegetable stock
parsley
parmesan
Method: 
  • Saute onions in olive oil, then add garlic, finely chopped carrot and celery
  • Add the pearl barley and stir to coat in the oil
  • Add cubes of swede
  • After around one minute, start ladeling in hot stock, as you would a rice risotto
  • Contiue to do this, while stirring, for around 40 minutes, or until the pearl barley is cooked
  • Add a generous grating of parmesan and a handful of chopped parsley
