Beetroot, carrot and red pepper soup with onion and garlic

Onion
Carrot
Grated Beetroot
Chopped Red Peppers
Method: 

Remke just made this for tea to hit her 7-a-day target for Bess & May.  It’s lovely. She says use the proportions you fancy! Sweat chopped onion in sunflower oil and add some garlic and thinly sliced carrot.  Continue sweating and add chopped red pepper and grated beetroot.  Add water and cook until tender, season with black pepper then blend.
