Some top tips on how to eat more vegetables.

The BBC brought Ottolenghi into their studios yesterday to advise on how to eat more veg.  His tip was to spice almost any vegetable up with his Harissa sauce or pesto. He also promoted what I would call sweating vegetables in a little oil instead of boiling in water.  This ‘sweating’ is something we do a lot and I guess it helps to retain water-soluble nutrients. To make a quick side dish for any meal we often wilt things like spinach, chard, shredded cabbage or kale in a tiny amount of water. Dress with olive oil, black pepper and perhaps a little balsamic vinegar.
