Beetroot, coconut and lime soup

Ingredients: 
25g butter
2 small onions
750g baby beetroot
300ml vegetable stock
1 can coconut milk
1-2 limes
6tbsp plain yoghurt
Method: 
  • Wash and trim the beetroot and finely chop
  • Slice the onion
  • Melt the butter in a pan and add the onion
  • Saute for a few minutes before adding the beetroot. Stir round for a couple of minutes before adding the stock
  • Simmer for 15 minutes. Blend then add the coconut milk and lime juice to taste
  • Serve with a large tbsp of yoghurt and grated lime zest
